Description
During pruning, the plots whose fruit is to form part of the coupage of this wine are selected. The harvest date is set when the grapes have reached the optimum degree of ripeness in each plot, and the grapes are hand-picked. Once the bunches arrive at the winery, they are de-stemmed and are directly transferred to maceration in tanks, which is extended until the desired balance in the wine’s composition is reached. The wine is devatted by gravity without mechanical action and the wine obtained, after an initial racking, undergoes malolactic fermentation. The ageing of this Roble Viña Arnáiz is carried out in French oak barrels for 6 months.
