Description
During pruning, the plots whose fruit will form part of the coupage of this wine are selected. After the careful treatment that the vines receive throughout the year, the harvest date is set when the grapes have reached the optimum degree of ripeness in each plot, and the grapes are harvested by hand. Once the bunches arrive at the winery, they are de-stemmed and undergo maceration in vats, which is extended until the desired balance in the wine’s composition is reached. Devatting is carried out by gravity without mechanical action and the wine obtained, after an initial racking, undergoes malolactic fermentation. The wine is aged in new French and American oak barrels for 14 months, during which time it is racked three times to help oxygenate the wine. After this period, the wine will remain in the bottle for a year to complete its ageing period.
